Cooking octopus can be a bit tricky, as it requires the right technique to ensure it is tender and flavorful. Here’s a basic guide on how to cook octopus:

(HOW TO COOK)

Ingredients:

  • 1 whole octopus (around 2-3 pounds)
  • Salt
  • Olive oil
  • Lemon (optional)
  • Garlic, herbs, or other seasonings (optional)

Step-by-Step Guide:

  1. Prepare the Octopus
  • Thaw if frozen: If you’re using frozen octopus, make sure it’s fully thawed before cooking.
  • Clean the octopus: Rinse it well. If it hasn’t been cleaned already, remove the beak (at the center of the tentacles), eyes, and any innards. Most octopus sold in stores is pre-cleaned.
  • Optional: You can remove the skin, but it is often left on for flavor and texture.
  1. Tenderizing the Octopus

Octopus is known for being tough, so tenderizing is essential:

  • Freezing: If the octopus hasn’t been frozen already, freeze it overnight. This process breaks down the muscle fibers, making it more tender.
  • Boiling method: You can also tenderize it by simmering it in water for about 45 minutes to 1 hour (depending on the size). The idea is to cook it gently until the flesh is tender and soft. Adding a cork (some say it helps to tenderize) to the water is a traditional method in some cultures, but it’s optional.
  1. Boiling the Octopus
  • Boil water: Bring a large pot of salted water to a boil.
  • Cook the octopus: Add the whole octopus to the boiling water and reduce the heat to a simmer. Allow it to cook for 45 minutes to 1 hour, checking tenderness every 20 minutes. A fork should easily pierce the flesh when it’s done.
  • Cool it down: Once cooked, remove the octopus from the water and let it cool slightly.
  1. Grilling or Searing (Optional)

Once the octopus is tender, you can enhance its flavor with grilling or searing:

  • Grill Method: Preheat the grill to medium-high heat. Brush the octopus with olive oil, salt, and pepper, and grill it for 3-4 minutes on each side until it gets a nice char.
  • Sear in a Pan: Heat a heavy skillet with olive oil over medium-high heat. Once hot, sear the tentacles for 2-3 minutes per side, or until lightly browned.
  1. Season and Serve

After grilling or searing, drizzle with olive oil, a squeeze of lemon juice, and any additional seasonings (like minced garlic, herbs, or chili flakes) to taste.

Serving Suggestions:

  • Serve as an appetizer or main dish, accompanied by vegetables, salads, or pasta.
  • Octopus pairs well with Mediterranean ingredients such as olives, feta cheese, tomatoes, and herbs like parsley and oregano.

Enjoy your tender and flavorful octopus!
